Vegetable Stew “Ciambotta”

Ingredients

  • 400 gpeppers
  • 300 gtomatoes
  • 150 gpotatoes
  • 150 geggplants
  • 4eggs
  • oil
  • q.s.salt
  • black pepper

Preparation

  1. Let the potatoes boil in slightly salted water, peel the potatoes and cut them into small cubes.

  2. Cut the onions into thin slices and let it brown for a few minutes in a few spoons of oil, being careful not to make it turn to dark.

  3. Add the peppers, the tomatoes and the eggplant that you cut into small cubes.

  4. Let the vegetables cook while stirring continuously for 10-15 minutes and then add the potatoes.

  5. Keep cooking for about 30 minutes adding salt and pepper in the right quantity.

Notes

When the vegetables are cooked, add the eggs, stir, remove from the heat and serve with a good white wine.
