Cotechino is a fresh pork sausage
According to tradition this dish should be had the first day of the year (or the last) together with lentils.

- 300 glentils
- 2 stemscelery
- q.s.salt
- q.s.pepper
- 2 sprigsrosemary
- 1bay leaf
Preparation
Cotechino and lentils can be prepared in a few simple steps.
Prick the cotechino with a toothpick and then wrap it in aluminum foil. Immerse it in cold water, let it simmer slowly for about two hours.
At the same time, put the lentils in a separate pan with plenty of cold water, half an onion, a stem of celery, a pinch of salt. Bring to a boil then simmer for a short time.
In another pan, heat oil and butter, add the half onion and the other chopped celery stem, the rosemary and the bay leaf to flavor, add the drained lentils and season over low heat.
Add salt and pepper. Drain the cotechino and peel it while it’s still hot, cut it into slices.
Place the lentils on a serving dish and arrange the slices of cotechino on top.
Notes
You can easily find pre-boiled cotechino wrapped in aluminum foil. In such case the boiling time is about 20 minutes.
