Flour 0
Type 0 is a soft wheat flour and it contains more gluten than Type 00 which makes it the best choice for making bread and pizza dough which will have a more consistent structure.
Flour 00
Flour 00 is the most common type and it is obtained from the extraction of the core of soft wheat grain.
Type 00 is more refined than Type 0 and it does not contain semolina or bran.
Flour 00 is composed almost exclusively of starch and proteins but poor in proteins, minerals, vitamins and fiber.
This type can also be used for bread and pizza, but the dough will be softer.
