In order to prepare a perfect soffritto, you will need only a few ingredients: one onion, one carrot and one stalk of celery which you will cut into small cubes and simmer in a pan together with extra virgin olive oil.

Preparation
Clean the onion, peel it, slice it into two haves and cut them into small cubes.
Chop the onion into thin slices and chop them into small cubes as well.
Wash the stalk of celery accurately under running water, remove all the leaves. Also remove the external fibers with a potato peeler.
Slice the stalk into halves and chop them into small cubes just like you did for the onion and the carrot.
Heat up the extra virgin olive oil in a pan and then add the mix of minced vegetables. Stir it well so as to let the vegetables brown on all sides and let it cook for at least 15 minutes or until the onion is completely transparent.
After 5 minutes, you can add the white wine (or water) to speed up the cooking.
